I would like to learn how combat is actively done here and first-hand experience with a staff member in a Quest seems like a good way, but I do fear that they may be meant for more than one character to tackle, thus making death a really high chance if I try to go it alone.
Any chance on getting a difficulty rating on Quests? Or should we assume it will adjust to whoever is in it?

As a member, it is recommended that you judge what you read on your own. If it's a quest about finding a lost amulet in the dark and forbidden depths in the underworld, with promise of great power and a lasting legacy... It's going to be hard.
On the other hand, if it's doing some quick Jobs in Twilight Town, it isn't going to be too hard.
If you want to see how combat works; I'm sure any of us admins would be willing to throw together some sort of quest that has some easy heartless-bashing. Or we could just invade a thread.

OK, but can we at least retreat from Quests(Assuming we can physically pull it off in-character before dying, of course) if we think we're in over our heads?
Also, the rules don't seem to say not, but I want to check anyway. Are we allowed to be in more than one Quest at once?

Retreating would likely depend on the situation. If surrounded by Heartless and in the Underworld, I'm gonna guess no. xD
Howabout we staffies stir up an item that allows you to drop out of a Quest?
Iunno about multple Quests though. It's a fact that a character can be in more than one thread at a time, on one world, but given we're running Quest shops, it might be decided you can't be in more than one Quest at a time. One char per Quest per world, I mean.
Grav?

Yes, that's what I meant by physically possible in-character. Like just abandoning whatever the task is and leaving, if nothign is technically stopping you.
1 per char per world makes sense, but could I potentially have (For example)Graow in a Quest in H. Town while Yuffie is in a Quest in RG?

Yes, that is totally possible. And yeah, you can leave a quest if you can think up a way to make it possible.
